A moist, nourishing cake that you can have for breakfast without guilt and without a mid-morning sugar crash.
1/2 cup almond flour
1/2 cup coconut flour
3 tbsp ground pecans
2 eggs
1/3 can full fat coconut milk
2 large apples, chopped in small pieces
2 tsp cinnamon
1 tsp cardamom
1/2 tsp baking powder
Vanilla & honey if you want it sweeter but be aware that won’t be low carb anymore
Almond milk or water to thin it if needed
Mix the almond, coconut flour with the pecans and spices. Add the eggs, coconut milk, vanilla and mix. If it’s too thick, add some plant-based milk to thin it (or a splash of water). Stir in the apples pieces.
Bake at 180C for 30-40 minutes, until golden on the top.
Serve with coconut yoghurt and berries.
